Beef Stroganoff- Firehouse Recipe

This is another of my FFHs dishes he often makes at his Firehouse. Another one can be found here. He gets requests for it quite often. On occasion, he will make a scaled down version for us at home. We enjoy it very much, as does FFH, although he often complains it needs some color. Kind of a funny comment coming from a fireman brave dude, huh? He has changed the original recipe a little bit and made it his own. Our preference is to serve the stroganoff over egg noodles--they MUST be the broad kind, according to FFH-- ya' know its better that way. When asked why, I am met with the answer we all know and love, "because it is!" Beef Stroganoff-scaled down version
  • 2 1/2 pounds beef chuck roast
  • salt and pepper, freshly ground
  • 4 ounces(1/2 stick) butter plus 2 tablespoons
  • 6 scallions, thinly sliced
  • 4 tablespoons all purpose flour
  • 1-14 oz can beef broth
  • 1 teaspoon mustard
  • 10 oz fresh mushrooms, sliced, wiped clean
  • 1/3 cup sour cream
  • 1/3 cup white wine
  • More freshly ground black pepper
  • Salt to taste
  • egg noodles.Broad.
Remove any fat and gristle from meat and cut into strips 1/2 inch thick by about 2 inches wide. Here he is, FFH, removing the fat, removing the gristle, cutting into strips. (In case you are wondering, in the container near the chuck roast ,are buttered rum cookies, which I will be blogging about soon.)

Just look, look, at the intense concentration in his face. (Oh ,mercy me, those cookbooks you see are only about 1/8th of my collection. ) That's not even including all the magazines Ive accumulated! Yikes. By the way, when my FFH cooks, and I love when he cooks, I love when he cooks, I do so love when he cooks, he must have this to help him through the task. Yes, a nice COLD one. Here is the meat as he continues to cut it the way he likes. Only he can do this job, you know. Season the meat thoroughly with salt and pepper!! In a large skillet over medium heat

Melt the butter and brown the beef strips quickly,baby. Then, push the beef strips to one side. Add the scallions, and cook slowly for a few minutes, then push to the side with the beef strips.

(Don't worry about all that liquid, that is going to become a thick, rich, tasty gravy that will go right to our booty. Do you care? I don't. I love to eat. I love when my FFH cooks for me.)

Stir the flour into the juices on the empty side of the pan.

Look- there's FFHs hand. Don't you adore the way he holds the wooden spoon? I like my wooden spoons. (Those tiny dark browned burnt bits you may see are sooo going to aid in making the gravy spectacular) Now, pour in your beef broth and bring to a boil. Stir constantly. Lower the heat and stir in your mustard. ( FFH insists on using regular Guldens, but maybe, just maybe dijon would be ok too??) Hey , who am I to argue when he is cooking. Have I mentioned I love when my FFH cooks for me? Cover and simmer for 1 hour or until the meat is tender. Meanwhile, take your fresh mushrooms, and cook them in about 2 tablespoons of butter,

(I've heard somewhere that butter is one of the food groups. So, get your servings in.) Cook until the mushrooms, are browned somewhat

OK, so they aren't evenly browned. I did this part of dinner for my FFH. I am NOT a chef. I just enjoy cooking. Love everything about it. Especially the eating part. Five minutes before serving, stir in your mushrooms, the sour cream, and your wine.

We prefer any type Pinto Grigio. Well, we really prefer Santa Margherita, (sp?)but this was on sale, and it tastes , yep, tastes marvelous.

To serve, we place BROAD egg noodles on a plate, top with the stroganoff, and the yummy gravy, taste of salt, and loads of freshly ground black pepper. See?

Geez, I guess FFH is correct. Really does need a splash of color. Don't tell him I said he was right. I love when my FFH cooks for me. Thanks FFH for a tasty meal. I'll be looking forward to the next one. Next time I'd like you to wear your Firefighter boots while cooking, OK? Hey, how did he get in here? Well, since he did, meet Clooney our new puppy. Yes, I named him Clooney, and no, it wasn't after George. I mean do you really think I'd want to think of George Clooney every time I say, Sit Clooney, Good Boy Clooney, Come here Clooney, or BEG Clooney. BEG Clooney. BEG Clooney.C'mon now.   8. Beef Stroganoff is something I learned to make as a teenager and I have continued to make it for 37 years of marriage. It has often been our "special" meal for special occasions. People are usually surprised to find out that it is so simple to make.

    And I agree with your FFDH--it has to be served over broad egg noodles! Just because! :)

  12. Ha! Thanks for letting me know what to NOT do with that candy :) I actually made this cake too, it stuck something fierce! But we don't mind our cake scrambled, it was pretty good.
