Stuffed Flank Steak

Stuffed Flank Steak filled with all things good!

This is going to be a get down to business post, no, not monkey business, food business. I know I always say that but never can I help myself, but I'm going to try. It is St.Patricks Day and I have to be at the children's school in a bit to help with their festivities! I am dressing up as a leprechaun whore and am wearing these shoes

..NOT. Well, truth be told, Not at the school, however, I have other plans on my agenda with these shoes and my plans also involve Baileys, softball sized hand crafted shamrocks, and irish jig music. Oh yes, and a pole.

One thing I must saybefore beginning is that this recipe calls for jarred roasted red peppers, jarred!! Oh My God, I call that fake. Fake Fake Fake!! (I usually roast my own, but had NO time last night so I resorted to the FAKE kind.)The meal still tasted delicious, but the fresh adds something extra to the flavor!Faking is NOT a good thing, whether it be roasted red peppers, faking sick to stay home from school, faking a signature, faking you like someone.. BUT you all know what the worst type of faking is, YEP, that's right, faking the big O with your partner. Why in the world would anyone want to fake the big O??

  • Maybe they are tired.
  • Maybe they don't want to let loose.
  • Maybe they don't want their partner to know they have no skill in the bedroom.
  • Maybe their favorite TV show is coming on.
  • Maybe they have a favorite song in their head and want to moan to the beat of the song?
  • Maybe they never had the big O and don't know what they're missing.
  • Maybe they'd prefer to give the big O to themselves.
I don't know why for the life of me.. To me that is one of the Wonders of the World. I don't get the faking issue. How do the fakers not laugh at themselves when they moan, yell, scream ,pull hair, scratch shoulders, say OMG or Yes,Yes or Lets Go Big Poppa? How do they know when its time to lower the moans, or louden the groans? How do they know when to perform the finale? Do they have a rhythm? Do they practice? What are they thinking when they do that? Groceries, taxes, bills, what? Do they fake movements also?

I'm too selfish, that wouldn't be me. I want what I want and need what I need and I'm damn well gonna tell you if I aint satisfied. How the thought of red peppers jarred got me here, I don't know. So please don't ask and don't judge, just go with the flow. Honestly though if you are faking that really bites the big one for you! But no more wasting time my precious people, lets get down to the flank!

Stuffed Flank Steak.

Preheat your oven to 425. Lay out your flank steak on a cutting board.

Holding your sharp knife parallel to the board starting at the long side, slice flank in half to the opposite end, WITHOUT cutting all the way through!
Open your steak up like a book and flatten out slightly. Try to make it an even thickness. Now prepare your filling. Open and thaw a 10 oz box of frozen spinach and squeeze dry. Also get your roasted red peppers, faker, and chop them up.
Gather your other ingredients
and combine all these in a bowl.
Along with 1/4 teaspoon of each of these seasonings.
Mix to combine.
Season your steak with an additional 1/4 teaspoon of garlic salt and pepper. Press your filling onto the steak leaving a 1 inch border on all sides.
Roll up your steak.. reminds me of the song.. Roll out the Barrel, if you fake, you'll have no fun, roll out the barrel, please try and really come. Anyway, I digress, From the end off the steak, roll it up to enclose filling.
Tuck any loose filling back into the ends. Tie your steak with cotton twine at 2 inch intervals to secure. Rub the outside with oil, I like rubbing big pieces of meat with oil-- it's just so sensual, and sprinkle another 1/4 teaspoon salt,pepper and garlic salt on meat.
Roast this guy at 425 for 35 minute, then increase heat to broil for 5-10 minutes, turning once.
Let your meat rest 15 minutes, hahaha let the meat rest, yeah right not in this lifetime.
Remove twine, Slice and serve.
PLEASE make a gravy, even a thin one out of the gorgeous pan drippings. The article doesn't call for it, BUT FFH DOES! and he thinks it brings this dish to a whole new level. I grudgingly agree. See how smart FFH is, smarter than Family Circle WOMENS magazine... What a wise Fighter of Flames is he!
It adds so much to have some gravy. FFH wanted it, and being thekind of wife I am, what FFH wants he gets, He does not realize how very fortunate he is, so I quick whipped him, I mean, whipped up the gravy with the drippings and it made this meal all the better.
Unfortunately, I don't have a gravy picture, FFH-who rarely complains, was ravenous, and was already bitchin that his food was getting cold.

You made my children's morning.. all 4 of them were hysterical when they woke up to finding their toilet water green. I am so happy I read your post this morning before they awoke. I ran to my cabinet to find green food coloring and did the deed. My youngest was afraid the leprechaun may still have been in the house, so thank you! She then asked if Santa peed red for crissakes.

  1. This looks really good! I've been seeing quite a few flank steak recipes in magazines I've read recently and I must admit, I have been tempted to try some. The only thing is, where I get flank steak around here, the pieces are always so huge and way too much for one person. Well, I guess I could invite my family over...

  22. Love the step-by-step. Have never stuffed flank steak before. Usually marinade it in red wine and some soy and scallions and garlic and am happy. But this is more fanciful - fitting for a Sunday dinner... or any other time you want to feel special.

  26. I love flank steak and this looks great! I have a Rachel Ray recipe I use that calls for stuffing flank steak with meat and cheese and cooking in a tomato sauce. Yum! And uh faking....what the hell?? I figure if he sucks that bad that you need to fake it you should be in a different relationship :)

    I made stuffed flank steak once. Made the stuffing, rolled it up. I kept thinking that the steak looked a little "off". Checked the package and it was like 4 years old. Yuck! (My grandma had cleaned out her freezer and was obviously trying to poison me). I had to throw the whole thing out.

They don't even question the fact that the leperchauns were here because they can't even imagine I would ransack the house like that for nothing. They have no idea what their mother is willing to do for a prank! And the food looks delicious!

  65. I have been a bad bloggy friend. I am so behind on reading your wonderful blog. Why? Because I save it as my special treat, to savor after I finish all my other stuff, and I just have not been finishing my other stuff lately!

    This flank steak is gorgeous, and what a great combination of flavors! DC will think he has died and gone to heaven if I make this!
