Grilled Chicken Fajitas With Peppers and Onions

Have you ever got caught looking? You know what I mean.. Have you ever been caught with your eyes where they aren't supposed to be?? Well, it happened to me. OMG, talk about a red face, and it takes a lot to give me a red face, Let me Tell You. My daughter had softball practice the other day, and her coach was entering the dugout where I was hanging out..

The guy had on gray sweatpants, and his ample lumpage caught my horny eye. Holy crap, one of the biggest, longest lumps, like ever, and NO it wasn't a cup, I just know,don't tell me, I am a Johnson expert, you know.

Well, my eyes must have popped like saucers, and I was just about to nudge my girlfriend to give her a cheap thrill, when the coach said, Hi, Donna. I looked up and he had the gleam in his eye, that knowing smile, the Yeah, I got the goods baby don't you want it ,look.. My face flamed I tell you.
He caught me.. And he was happy bout it. I mumbled my hello and winked. No I didn't wink, I said hello and inadvertently stroked my right breast. Kidding again, I just kinda said Hi back.. and watched his rear as he walked away..

How come there are names for men and not women.. thought to ponder. Why are there sayings like He's a leg Man.. He's a Boob man, He's an ass man.. There should be equal time for women too. I mean we admire men from afar and up close, do we not?

There should be adages like She's a bicep woman,

She's an ab woman,
She's a leg woman, She's a butt man,....oh yes ride me cowboy
She's a pecs woman and of course, She's an all about the johnson woman. ..um like show me yours, studly.
Double standards Don't you hate them?? . Yep, women make sure to look atthe lumpage, just try not to get caught.. unless you want to, Its kinda fun actually.. I may do it again.. to the first base coach, I been eyeing him, ladies, I been eyeing him..
Yeah, I been eyeing him too!

This recipe is from Cooking Light Magazine.. Aren't you proud of me , Teresa?? If you do not know Teresa, stop by her blog, she has awesome food choices.. she turned me on, no not literally, she turned me on to Cooking Light recipes. Now Teresa, Iwant to know your favorite one.. Here is what I made.

Grilled Chicken Fajitas with Peppers and Onions. I only adapted it slightly. Original recipe found here.

Combine all your marinade ingredients together,seen here,

including your freshly squeezed lime juice,
and freshly grated lime rind, in a large bowl.

Take your chicken breasts and place them in a large resealable bag along with 1 1/2 cups of the marinade. Seal and marinate 4 hours or overnight, in the refrigerator turning occasionally.

Cut up your red peppers, green peppers, and vidalia onion into wedges as directed.

Combine these veggies with the remaining marinade in another large zipper top bag and marinate the same way as the chicken.

Prepare your grill. I do this by handing FFH a beer, or 2, or 3..

Remove chicken from bag and discard marinade. Remove veggies from bag and save marinade in a small saucepan.; set aside. Place chicken
and veggies on grill rack coated with cooking spray ( I placed veggies in a disposable tin for FFH)
grill 8 minutes on each side or until desired degree of doneness. Wrap your tortillas tightly in foil.
Place tortilla pack on grill during the last 2 minutes of grilling time.Bring reserved marinade to boil. Cut chicken diagonally into thin slices.
Place the chicken and veggies on a serving platter
and drizzle with the reserved marinade.
Get your stuff lined up, your sour cream, salsa, cilantro if using.. FFH hates cilantro, :( so I omitted.
Arrange chicken and vegetables in the tortilla.
Optionally top with sour cream, chopped cilantro, salsa. Fold sides of tortilla over filling.
Serve.
This meal was wonderful
and declared a keeper by my FFH.
I will be making it again. Simple and so delicious!

  5. I am glad I was not drinking or eating anything, or hubby would have had to give me mouth to mouth...as I was scrolling down getting excited...I realized that the food does get me just as excited...food and men just seem to go together...a nice 'package' all wrapped up in one!

  11. I got caught once checking out my boss....and the only thing I could say was "Nice tie". It became a very long running joke around the office.

    And...a shoulder lady - definitely. Broad shoulders do it for me (and goatees...if they have both I'm a goner).

  46. You know, they spend so much time looking at our many and varied "packages" that it's only fair that we take a peek every once in a while. Or more. What's sad though is when you try to take a peek and there's nothing there. Or very little. One of my friend is on crew and wears spandex a lot, and let me tell you I'd rather he didn't. There are some things that are just a let-down.

    But NOT your fajitas! They look so good. I love fajitas, one of my favorite things to order at Mexican restaurants. And they are so much fun to put together and can be stuffed with so many things.

    I love Cooking Light recipes. People always ask my husband how he's stayed thin when I cook as much as I do...and a big part of it is that I cook a lot from Cooking Light! Their recipes are way better than you'd think...although I do throw some Paula Deen-quality recipes in the mix sometimes, too ;)

  66. Donna, I love this idea for making fajitas, I always pan fry mine and they aren't the same as I would get with a skillet, but I think the BBQ twist would authenticate it a bit.
    Just as an aside - My college roommate and I kept a picture of Ty Beckford on our fridge and often caught each other touching his abs as we walked by - your pictures reminded me of that today and made me smile :o)
