Still unpacking, still not myself yet, still disorganized, still have 3 boxes of sex toys left to hide around the house.. you know for impromptu sessions. I have aches in my body unpacking my prior home of 16 years into our new home of 1 week. So, I am SO not me yet, but I am getting there, bear with me, bitch on wheels is my name of the week. The me you know and love or know and hate will be back soon.
Here is my quick weeknight humble food offering ..chicken parmesan and a chocolate pudding poke cake. Please excuse my photos as I am still playing with the light in my new home.. also I dont have the energy to focus much on quality right now. I know you understand. Hoping to have some pics of our new digs next time around. Waiting on a sunny day NJ for that!
OK anyway, my weekly quickie dinner .. Starting with the Chicken Parmesan. Either make your favorite marinara, or use up your leftover Sunday Gravy like I did. Heat it up gently in a pot. Set aside.
Prepare your chicken. Get some nice cutlets, Set up your dipping station.
Flour them, egg them, and then breadcrumb them.
Fry them in some olive oil and butter

till done to your liking.

Set aside. Grab your big baking dish and place a layer of sauce on bottom. Next , layer your breaded fried chicken.

Now, shred some freshly grated parmesan cheese on top.
Cover with more sauce.

Top with slices of mozzarella cheese, thin or thick as you like..

we like the cheese.. finish it off with more sauce. Bake at 350 till cheese melts.
I ususally serve with a side of pasta, salad, and some crusty bread.

Delicious, satisfying easy to make weeknight meal. My children and FFH request this all the time.
I saw my weeknight dessert recipe on The Friday Friends blog. Love Debbies blog. She has delicious food and always some nice chatting to do, go visit her. I knew I had to make it when I saw it. It is so simple yet so delicious. Perfect for when you want to make a dessert but dont want any hassle. Here's how you do it. Grab these 2 items.
Prepare cake mix according to package directions.

When cooled, prepare instant pudding according to package direcions. Make some holes in your baked cake by pressing/ poking something like this (If I were myself Id make a comment about poking, poke me baby)
into the cake

Pour the pudding over.

Make sure it gets in all the holes. (If I was feeling up to myself, Id have something to say about that line also)Spread as evenly as possible.

Refrigerate for a few hours. And serve. Look how delicious this is.

It is pretty and tasty.

Thank you Debbie for a wonderful weeknight dessert.

This is for you.

I cannot wait to make both of these! I have been wanting to make Chicken Parmigan for a long time!
ReplyDeleteI'm first in this line! One of each, please...
ReplyDeleteYES! I am first!! Are you trying to kill me with your recipes? Come on! haha love it.
ReplyDeleteThat cake looks so fun! I'll look for any excuse to stick my fingers into a freshly baked cake...it's like you get to be five again. Chicken parm is a great weeknight staple - who doesn't love breaded chicken smothered in cheese?
ReplyDeleteI'm sure the whole new house thing is overwhelming but be patient, before you know it you will be unpacked and feel at home again!
Wow! Your chicken dish turned out soooo much better than my version usually does! Looks yummy! Id love a slice of that cake too!
ReplyDeletethat's pudding?! no way, i thought it was icing! this is brilliant.
ReplyDeleteWhen I saw the post title,I wondered what a "poke cake" was. but reading into the middle of the post,I was thinking.."So that what a "poke cake" is...you poke it!" so silly of me..sorry,first time I've heard of this and it looks yummy and it's pretty easy which are two of my most favorite things in a dish.
ReplyDeletethat cake makes me want to stick my finger in it! your chicken parm looks excellent.
ReplyDeletethis style of cake was part of a metaphor we used in college to study for finals - the cake was your brain after the semester and the holes were the substances you used to help you study and the pudding was the new info soaking into the cake.
What a fun cake. Very much like my jello poke cake. I just know you like anything that has to do with poking (ha ha, dumb joke :) Your chicken looks so great and very simple. These are both going on my must try list. Good luck unpacking.
ReplyDeleteChicken parmesan is one of my very favorite things, and yours looks delicious! I'm definitely, DEFINITELY going to try it!
ReplyDeleteI hope you get all unpacked and settled and back to feeling like yourself soon!
That all looks fantastic. Hope you're feeling better soon, moving can be a bitch.
ReplyDeleteThe chicken Parmesan looks cheesy and delicious and the cake looks like so much fun to make!
ReplyDeleteWhoa chocolate pudding cake looks dangerously good!!
ReplyDeleteNow the important decision - which to try first? Love chicken parm, haven't had it in ages....
ReplyDeleteI love the picture of the cut chicken Parmesan with the cheese oozing! Yum!
ReplyDeleteI made chicken similar to yours last night, minus the Sunday gravy because I was lazy. This morning, I'm making Sour Cream Chive Biscuits to serve with the chicken leftovers. Mmmmmm.
ReplyDeleteConsidering you still feel disorganized, this is a great post. My kids would go crazy for that cake.
Both of these look delightful!
ReplyDeleteDelish!! I love chicken parm...and I totally wanted to make that cake, too! Can't wait for some Donna stories ;)
ReplyDeleteThat looks like so much fun!! It must be nice to have so many kids to make all these large size desserts. I always have to scale down and measure weird sized ingredients.
ReplyDeleteThey both look great - and yet, so many interesting things you could have said about poking ;)
ReplyDeleteHmmm....will you serve these two at house warming day? Perfect for a lunch buffet...
ReplyDeleteI am sure the cheesy chicken gratin will sell like a hot cake.....
The voyeur in me wants to know...is that a swimming pool I see in the background? Nice!
ReplyDeleteThis is a dinner that my boys would gobble up and totally love. Simple. Fast. Dee-lish!
I remember making the poke cake as a kid!!! Both dishes look yummy!
ReplyDeletewow wow i have no words to say how fantastic both the dishes r!!!!! Great work Donna!!!
ReplyDeleteI agree with Cathy above...I was expecting a bunch of poking jokes. Which isn't to say I didn't enjoy the post at all! ;) The cake looks totally amazing - I must give that a try sometime.
ReplyDeleteA lovely meal prepared under what still must be trying circumstances. Thanks for sharing it with us.
ReplyDeleteDonna,
ReplyDeleteBoth of these dishes are just fantastic! Hope you organize those toys, wouldn't want you not able to find them, lol. Take it easy!!!!
xoxoxo, Joyce
Both recipes look delicious. I would never have thought of chicken parmesan as a quick meal to prepare (I can be breading-challenged sometimes), but you make it look quick and easy, (and I trust you) so I must try your recipe soon. My son would go crazy over this cake, he hates frosting, but loves pudding.
ReplyDeleteWelldone! Both are looking so good and yummy!
ReplyDeleteHi Donna!

ReplyDeleteMoving stinks! We've moved 4 times in 6 years, twice across the country. I know what you mean about not being yourself yet. It takes a little time to settle in and feel at home.
ReplyDeleteThis all looks so good. I'm drooling over that chicken.
sorry the move is going stressfully - although these meals look good enough to make anyone feel at home. i love chicken parm.
ReplyDeleteI have been trying to welcome you back but every time I go to comment, my window closes! Hopefully this will actually go through! WELCOME BACK! We all missed you! :) These recipes look great!
ReplyDeleteyummy, now I see why you called it poke cake!!
ReplyDeleteoh and I took a badge LOL
ReplyDeleteI've always wanted to make a poke cake - can't you make it with jello too? I haven't been able to find a recipe for that.
ReplyDeleteDonna - my dad used to make this cake all the time and how you have brought back sweet sweet memories of my dad and of my childhood! Thank you. And this chicken parmesan is exactly what my sons would love (and me too!).
ReplyDeleteAnd I am following your move and wonder how you did it! You know that I am up to my ears in packing cartons for my move in a mere two weeks! Bug hug!
I usually will stop until the fry (for the chicken) and the dough being baked steps, so this is a great idea to add some more steps to make a wonderful dish :)
ReplyDeleteIt just erased my comment and I'm too lazy to type it all back out...grrr!
ReplyDeleteIt all looks great- I miss you! And don't play too much with your lighting, I think these look great :-)
~Monica H
I have never made chicken parmesan before. You make it look easy and good!
ReplyDeleteThe melted cheese looks awesome and what a great idea poking the cake!!
ReplyDeleteThe way you present the cake is brilliant, eventhough it's juz a simple cake! Why I never thought of that!
ReplyDeleteOh My God! That chicken looks perfect!! I'd love to have it for lunch! I loved how you drill the cake! haha
ReplyDeleteWhat a mouth watering frosting!
Hey Donna,
ReplyDeleteGlad that everything is going as good as it can for a move. I don't know how you had time to make this dinner but it really does look delicious. Make sure you take some time to rest!!
V. easy Chicken Parmesan...my daughter will love it! I know you're busy unpacking...but I'm missing The Boys!
ReplyDeleteI am right behind Buff...one and then back for seconds!
ReplyDeleteI love poke cakes! They are so light and scrumptious! My husband loves chicken parm but I've never been able to replicate it, I think te trick may be the pan frying that you did! I am going to try your recipe next week, he will be so excited!
ReplyDeleteHaha I was wondering what a poke cake was - makes sense :) Your chkn parm looks quite tasty too!
ReplyDeleteThat cake is seriously calling my name!
ReplyDeleteWeeknight chicken parm? Sweet! Your version definitely looks doable on a weeknight - I have to try it! I'd never heard of poke cake until recently and I've never seen a chocolate one until your post - it looks so delicious!
ReplyDeleteMoving is hell so I completely understand not feeling quite settled yet. We love you in all your forms, bitch on wheels included. ;)
ReplyDeleteI feel for you. I hate moving. Your chicken parm looks delicious! I bet your Sunday sauce is good. And what an easy and delicious looking cake. Good luck hiding your sex toys. LOL

ReplyDeleteMoist Supreme!
ReplyDeleteSeems fitting somehow :-)
I am so hungry for that chicken now! It is almost dinner... and I am playing on the computer instead of cooking..
ReplyDeleteCan't wait to see the new house!

ReplyDeleteHi Donna, I finally got through. I downloaded firefox and have no problems. After being on the phone for 2 hours with tech support, we figured out that the problem is some kind of incompatibility with your site and internet explorer.
ReplyDeleteWhat an easy weekday dessert! Sounds fabulous and easy!
ReplyDeleteGood luck unpacking your toys!! Good luck finding a hiding place...kids find everything. The dishes look terrific.
ReplyDeleteNote to self: do NOT visit this blog on an empty stomach!
ReplyDeleteAnd THAT'S why it's called a poke cake. We should've known! Looks good.
ReplyDeleteHi there Donna! Thanks so much for finding me ... so I could find you! I'm thoroughly impressed that you're cooking like this despite being in the midst of a move. Wow, it all looks delicious! Good luck with the unpacking ... I never was much good at that! LOL
ReplyDeleteI really don't envy you moving house - that is no fun at all. But I do wish you lots of happiness in your new home.
ReplyDeleteYour chicken parmesan looks fabulous, as does your cake. Great job under difficult circs. It's always tough working in a new kitchen, because it's hard to remember where you put stuff. Then what you're looking for is usually still at the bottom of a box somewhere. Good luck, Donna.
Sadly I've never found myself in this spot:

The cake looks so moist and delicious! Looking forward to hearing more about the new house.
ReplyDeleteChicken Parmesan is a staple around here. I don't think mine is as mouth-watering as yours. Now the chocolate poke pudding cake - how grand! You may pass me a piece. I long ago stopped dieting!

ReplyDeleteThe dessert looks so beautiful & so tasty!
We bought a new house and are moving in two weeks and I am SO not looking forward to it. Unpacking is a bitch if there ever was one.
