I am back.. with Pecan Raspberry Thumbprints and Mini Chocolate Chip Butter Bites

You missed me! You missed me! Now you gotta kiss me!(not a French one, don't worry) XXXXOOOO, missed you all too. I am finally moved into our new home. Moved in does not equate with unpacked, however, and my bubble brain head is working on exhausted overload. SO SO Overwhelmed is me. Soon, I will be posting about our new home, possibly the christening of it;)..but for today I have 2 cookies to offer you. AND I will be back to my ole commenting self shortly.

They are favorites here and adorn my Christmas cookie tray each year. Lets start with Pecan Raspberry Thumbprints. This recipe is adapted from The Ultimate Southern Living Cookbook and is just damn delicious!

Let's begin by getting our pecans,

and finely chopping them,
set aside. Now, beat your butter at medium speed till creamy and gradually add sugar beating well. Add some egg yolks and vanilla extract, beating until blended.Combine your flour and salt; add to butter mixture, beating at low until blended. Cover and chill dough for 1 hour.

Shape this dough

into 1 inch balls.
Lightly beat your egg whites. Dip each ball in egg whites and roll in the pecans.
Place 2 inches apart on cookie sheet,
make indentation in each, either with your thumb
or something like the end of this Bake at 350 for 15 minutes. Cool 1 minute on cookie sheets; remove to wire rack to cool completely. Press centers again with thumb while cookies are cooling.
Fill centerwith raspberry jamMakes about 3 1/2 dozen. Aren't these darling? They are a buttery , delicious, pretty treat. Beauty of this cookie is that you can swap flavors, you can do walnuts and strawberry, almonds and apricot, whatever. You can even sub almond for vanilla extract if you'd like.
Go to town with the cookie. They are delectable!
Now for the Mini Chocolate Chip Butter Bites. This recipe was given to me by one of my girlfriends who attended my Christmas Cookie party a few years back, it has been a keeper here ever since.

Begin by beating butter, powdered sugar, vanilla and salt in a bowl. Gradually beat in your flour. Stir

in your mini morsels.
Shape into one inch balls, or smaller.
Place on ungreased cookie sheets. Bake for 10-12 minutes
until set and light brown.
Remove from oven , leave on sheet until set and cooled. Roll
inpowdered sugar
and cool completely.
These are a breeze to make and are just so damned good. Literally addictive little bites of bliss in your mouth.
Yummy, yummyyummy!!

  13. Glad you're back Donna. We missed ya. Unpacking is such a nightmare but with your great attitude, I know you will survive.

    Thumb print cookies look delicious. I looked at the picture with the beautiful pecan halves and said, "oh no, she's going to grind those babies." And sure enough you did. Somehow it just kills me to grind pecans when the halves are that perfect. I know how hard it is to get perfect ones because I grew up shelling pecans. But whew, you put them to good use but I would have eaten many more than one before I put the top of the processor.
    Don't kill yourself unpacking - just remember, it'll be there tomorrow.

  15. Hi Donna, Welcome back!!! Glad you are moved in. Unpacking is a pain in the butt! I know you will be glad when it is all over. I usually also make those raspberry thumbprints at Christmas but they are so good I should make them more often. The chocolate chip ones look good! I haven't seen those before and I love the powdered sugar on them. They'd be gone here in no time!

  80. Love both of these and have been making jam thumbprints since I was a kid and LOVE the snowball cooies though I've never put chocolate chips in them. YUM! Now I wish the holidays were here again, well that and especialy because the heat here has been unbearable!
    Can't help but wonder if you've seen the Greek bread Teanna at Spork or Foon made recently?. I just think you'd like it! ;)

    I love your thumbprints because they're so different from the usual. I'ver never seen jam cookies coated with nuts before (or I should say I don't see them often enough to have any memory of one). The pecans are a really delicious addition.

  100. Donna - I've made the raspberry cookies for more than 40 years, but I know them as "Scandinavian cookies." The recipe came from my BFF's mom. The little CC ones are new though and look really interesting.
