You missed me! You missed me! Now you gotta kiss me!(not a French one, don't worry) XXXXOOOO, missed you all too. I am finally moved into our new home. Moved in does not equate with unpacked, however, and my bubble brain head is working on exhausted overload. SO SO Overwhelmed is me. Soon, I will be posting about our new home, possibly the christening of it;)..but for today I have 2 cookies to offer you. AND I will be back to my ole commenting self shortly.
They are favorites here and adorn my Christmas cookie tray each year. Lets start with Pecan Raspberry Thumbprints. This recipe is adapted from The Ultimate Southern Living Cookbook and is just damn delicious!
Let's begin by getting our pecans,
and finely chopping them,
set aside. Now, beat your butter at medium speed till creamy and gradually add sugar beating well. Add some egg yolks and vanilla extract, beating until blended.Combine your flour and salt; add to butter mixture, beating at low until blended. Cover and chill dough for 1 hour.
Shape this dough
into 1 inch balls.
Lightly beat your egg whites. Dip each ball in egg whites and roll in the pecans.
Place 2 inches apart on cookie sheet,
make indentation in each, either with your thumb
or something like the end of this
Bake at 350 for 15 minutes. Cool 1 minute on cookie sheets; remove to wire rack to cool completely. Press centers again with thumb while cookies are cooling.
Fill center
with raspberry jam
Makes about 3 1/2 dozen. Aren't these darling?
They are a buttery , delicious, pretty treat. Beauty of this cookie is that you can swap flavors, you can do walnuts and strawberry, almonds and apricot, whatever. You can even sub almond for vanilla extract if you'd like.
Go to town with the cookie. They are delectable!
Now for the Mini Chocolate Chip Butter Bites. This recipe was given to me by one of my girlfriends who attended my Christmas Cookie party a few years back, it has been a keeper here ever since.
Begin by beating butter, powdered sugar, vanilla and salt in a bowl. Gradually beat in your flour. Stir
in your mini morsels.
Shape into one inch balls, or smaller.
Place on ungreased cookie sheets. Bake for 10-12 minutes
until set and light brown.
Remove from oven , leave on sheet until set and cooled. Roll
in
powdered sugar
and cool completely.
These are a breeze to make and are just so damned good. Literally addictive little bites of bliss in your mouth.
Yummy, yummy
yummy!!
Mini Chocolate Chip Butter Bites

ReplyDeleteDonna! Yes, you've been missed. How do you do it? Moving, raising kids and still baking and blogging. These are at the very top of my favorite cookies-- raspberry thumbprints. I could eat a dozen of them in one sitting... Great job! Can't wait to hear about your new home.
ReplyDeleteWelcome back. Glad your move went well. I know how hectic it must be right now. But you've got some delicious cookies to help you relax after a long day of unpacking. =)

OMG love both of them!! looks so yummy!!
ReplyDeleteI did miss you, but not so much because we talk at least 3 times a day...cant wait to see the new house on Friday. You know those chocolate chip ones are my all time favorite..so delish and perfect for Xmas
ReplyDeleteGlad you're back Donna. We missed ya. Unpacking is such a nightmare but with your great attitude, I know you will survive.
ReplyDeleteThumb print cookies look delicious. I looked at the picture with the beautiful pecan halves and said, "oh no, she's going to grind those babies." And sure enough you did. Somehow it just kills me to grind pecans when the halves are that perfect. I know how hard it is to get perfect ones because I grew up shelling pecans. But whew, you put them to good use but I would have eaten many more than one before I put the top of the processor.
Don't kill yourself unpacking - just remember, it'll be there tomorrow.
Sam
Now you've got me fumbling for some cookies for breakfast!
ReplyDeleteHi Donna, Welcome back!!! Glad you are moved in. Unpacking is a pain in the butt! I know you will be glad when it is all over. ReplyDeleteYou amaze me...just after moving to a new home and you are already creating such yummie cookies...love them both, raspberries are so yummie, sweet and tart at the same time and the chocolate chip in powder sugar...yummie. Love the pictures as always.
ReplyDeleteWhoa... the mini-chocolate butter bites just made it into my to try pile! They look like Mexican wedding cookies, but with a surprise!
ReplyDeleteI am all over those mini-chocolate chip bites...yum!
ReplyDeleteOh yum! Now to decide which to make first!
ReplyDeleteYum both cookies look delicious!
ReplyDeleteYou're back!
ReplyDeleteI love the addition of pecan to the thumbprint cookies. i got all tired and bored with them. Never thought of adding nuts!
Bet you are happy to be back and in the new digs! Moving is crazy, but once you get back to your old routine--cooking--it's a sign you're getting settled. Those thumbprints must be made! Love them.
ReplyDeleteWelcome back! I am looking forward to a virtual tour of the new home. In the meantime.. please pass me another thumbprint. :)
ReplyDeleteThe thumbprint cookies are lovely and you're right. . . they are usually considered Chrsitmas cookies, but how lovely to have a tray of them with a summer tea on the patio. They look just beautiful.
ReplyDeleteLove both of these and have been making jam thumbprints since I was a kid and LOVE the snowball cooies though I've never put chocolate chips in them. YUM! Now I wish the holidays were here again, well that and especialy because the heat here has been unbearable!
ReplyDeleteCan't help but wonder if you've seen the Greek bread Teanna at Spork or Foon made recently?. I just think you'd like it! ;)
Looks delish as always!
ReplyDeleteNow come swing by my blog and pick up your award :)
wowzers! these look amazing. can't wait to give them a try.
ReplyDeletethese look so yummy! but where's the soft core porn?! ;) i love the chip butter bites. they're right up my alley!
ReplyDeleteThanks for checking out my blog! I love your recipes, they look great! And wow...these cookies look amazing! I LOVE thumbprint cookies, but I've never made them. I will definitely be making your recipe in the near future!
ReplyDeleteKids were just asking me to bake chocolate chip cookies this afternoon. I will have to give this one a try! Sounds yummy....glad you are back! :)
ReplyDeleteUnpacking is always the part I hate the most. I wonder how I can make such a huge mess when I start pulling stuff out of boxes. I love those pecan cookies.. dipping them in egg white and then coating with pecans is so smart!
ReplyDeleteWow, wow, wow I love your cookies. Beautiful.
ReplyDeleteI literally just said out loud, "oh my GOD, i wanna BAKE THAT" -- my boyfriend just laughed and shook his head. I'm not sure which of these cookies I want to eat more, they both look delicious!!! i love the idea of rolling those cookies in powdered sugar.
ReplyDeleteWelcome back!! The sugar coated cookies look sooooooo good!
ReplyDeleteTough choice...YUM!! Think I'll try one of each please! Donna, they're beautiful!
ReplyDeleteWelcome back! I am amazed that you just moved and still had time to bake cookies. Then again, I guess it's way more fun to bake than it is to unpack!
ReplyDeleteI love your thumbprints because they're so different from the usual. I'ver never seen jam cookies coated with nuts before (or I should say I don't see them often enough to have any memory of one). The pecans are a really delicious addition.
I'm so glad you're all moved in and baking again!
ReplyDeleteWelcome back!!!! Your treats looks awesome. I love little cookies that you eat in one bite:)
ReplyDeleteWow, these are both such unique and delicious looking little cookies. I want the chocolate chip ones, so I guess I gotta make them!
ReplyDeleteMmm they both look so good I don't know which one I'd taste first!! :D
ReplyDeleteNot only were you missed, I need you to come to MN (very nice in the winter - really) over Christmas and bake me your Christmas Cookie Tray. if that's just a sample - wow! Have fun christening your home!
ReplyDeleteI honestly can't decide which one looks better. If you offered me one of each and said I could only pick one, my head might explode.
ReplyDeleteVery professionally looking thumb pressed cakes. I am a nut for them kinda a cake that the whole thing can be put in one's mouth and devoured, very tasty indeed. thanks for the share :) xx
ReplyDeleteWow, these both look amazing. I am printing the chocolate chip ones right now. Man I have been so MIA and I don't have a move to justify it. Can't wait to hear about your new house. Wish I had one, if only we didn't keep getting outbid - isn't this supposed to be a down market. Ugh. Anyhow, sorry for the lack of commenting.
ReplyDeleteThey look wonderful! I want some! :)
ReplyDeleteDonna - I've made the raspberry cookies for more than 40 years, but I know them as "Scandinavian cookies." The recipe came from my BFF's mom. The little CC ones are new though and look really interesting.
ReplyDeleteWelcome back!
