Grilled Lemon Chicken and Sesame Green Beans

Grilled Lemon Chicken Sesame Green Beans UMMMM, yes please.
Here is my latest installment of My quickie weeknight dinner.. I try to do one weekly, if you haven't caught on yet. Takes me a while to catch on sometimes also, don't worry.

Before I begin, can I just tell you this chicken was moist, delicious, and very, very tasty (Gee the chicken sounds like me) for something so easy to put together. And the side veggie was wonderful as well. Original recipe is from Family Circle magazine and is found here. This is my slightly adapted version.

Grilled Lemon Chicken

Begin by squeezing some fresh lemon juicecut some lemon slices, and gather these ingredients.

Now, in a medium sized bowl, whisk lemon juice, white vinegar, fresh dill -I had only dried-, fresh basil, honey, dijon mustard, salt and pepper till blended.

In a slow stream whisk in the olive oil

Eww, like look at the veiny boney thing in my arm as I try to shoot photo and whisk at the same time.. My FFH loves how I can multitask, he loves when I give hand jobs- I mean-grip things like this so my veiny boney thing pops out.

Place your chicken breasts, pound them slightly, Id like to be pounded slightly right now, and place them in a ziploc bag. Add your dressing and 1/2 of the lemon slices. Seal the bag. Refrigerate 2-6 hours. I did about 5. Turn a few times during lovemaking, I mean marinating.

One of the adaptations I use is to then make another batch of the dressing, halved, to use for extra later. Ive found using the whole batch of dressing makes a better, more moist grilled chicken, more flavorful.. we've been making this for a couple of years.That's just my 69 cents worth. Add some black olive slices to the extra dressing.

Now, heat your grill, remove chicken from marinade, discard marinade, Grill chicken 5 to 6 minutes per side. Turn only once till done. DO NOT overcook. You want the juice baby! You need the juice. you crave the juice. Yeah so my hormones are a blasting a bit. If you are bbq savvy like my handsome FFH,

grill some lemon slices too for presentation. Thank you Linda for this idea.He either wears a firehouse shirt while grilling or Guy Harvey one..

And the ALWAYS Mandatory coors light.

And yes, the welcome mat , we even have one in our backyard, hung over one of our patio couches, why, dunno, says No Shoes, No shirt, No problem. Another future post of mine will involve welcome mats.

To serve, pour reserved dressing over chicken, season with a bit of salt, garnish with grilled lemon slices and some black olives.This is a lovely dish. Moist,

For one of my side dishes I chose Rachael Ray's Sesame Green Beans. Recipe here. They are so simple to make and I like them with this lemon chicken especially.

So, steam your green beans covered in 1/2 inch boiling water for 2 minutes and drain. set aside. Big freaking deal, right? Gather the rest of your ingredients.Gosh that was hard. I love when my FFH is hard. He is like a friggin proud flagpole, let me tell you. Heat a large nonstick pan over high heat. Add some vegetable oil, few drops of sesame oil, and some red pepper flakes. The pan will smoke. So will your bedroom if you try some new tricks.

Add your string beans and stir fry for 2 minutes. Add your toasted sesame seeds

and coarse salt, toss to coat beans evenly. Serve.

Simple, yet delicious,

side dish. FAST too.

  27. I love lemon with chicken. This looks terrific. The beans are excellent also!

    It is difficult to multi-task and pour while snapping pictures. It usually takes me several attempts. I have trouble holding the camera steady enough.

  70. I love lemon chicken and yours is so, so beautiful! I recommend Ina Garten's Parmesan Chicken that she serves over lettuce dressed in a really lemony dressing (it's on my site, it's easy and I think you'd like it for one of your easy weeknight dinners).
