Must tell ya one more thing before food business.. Hurley had a huge issue/problem while visiting us here in NJ... you see he lives in hot sunny Florida, and ventured into our NJ ocean, which he considers cold..wimp... He said Donna it was so cold, I needed a broomstick shoved up my ass to get my dIck back out. Dontcha just wanna be his best bud? You will laugh, you will eat, you will drink, you will be in danger. Oh yes, we laughed. This is my sis in law , Hurleys wife Sandy. He cut our damned heads off... see tequila effects you too big guy!Didja know my BIL Hurley is very consciously aware of our natural resources and our environment? One of his other famous Hurleyisms is If its yellow, let it mellow, If its brown flush it down. Ill miss you both, come back soon.
Here I have for you a couple of the buncha things we chowed down on while imbibing and partaking.. I offer you pan fried onion dip. Original recipe here. It has been a go to of mine for quite a few years, betcha have all the ingredients on hand. Simple to make, great flavor. Start by getting your onions, cutting them in half , then in 1/8 inch thick half rounds. Now heat your butter and oilin a large saute pan on medium heat. Add your onions, cayenne, kosher salt, and pepper
and saute for 10 minutes.
Reduce your heat to medium low and cook , stirring occasionally for 20 minutes
until onions are browned and caramelized
Allow them to cool. Now place your cream cheese, sour cream, and mayonnaise
in a bowl and beat till smooth. Add your onions
mix well. Taste to season and season to taste.
Serve at room temp.
I like to double the cayenne for a little extra zing.
Next up I have some peanut butter balls I made for all the kids. This is a favorite of all children, and most adults, even the fighters of flames enjoy these no bake treats. I believe they are also known as buckeyes. These always grace my cookie tray at Christmas.. I make about 15 different cookies each year, how bout you? To start get these 4 ingredients together,
confectioners sugar, peanut butter, butter, and vanilla. Mix them well. Stir in your Graham Cracker crumbs
and form small balls
These make loads
Now in a small saucepan melt together your semisweet chocolate chips and some paraffin wax
till smooth. Dip each and every peanut butter ball into the melted chocolate using a toothpick.
Let set on waxed paper till smooth
I store in refrigerator.
they last a while
Serve cold or at room temp! Dare ya to eat just one.

Paraffin wax? Does it have an aftertaste, or does it feel weird in your mouth? I've never seen such a thing in a recipe, but I see it makes them nice and shiny!

Peanut Butter Balls are my favorite! My aunt makes them the way you do, but I use semi-crushed Rice Krispies.

ReplyDeleteI love peanut butter balls....I mean LOVE THEM!! It's impossible to eat just one. I make those at Xmas, but there are just never enough to go around. You all sure lived it up- looks like a blast !! One time I drank about 15 of those green apple martinis. I couldn't go near another one again and can't stand the smell apples, it still makes me ill. I paid dearly the next day, but it was totally worth it. My stepsister had a Scottish wedding and all the men wore kilts, including my Dad - who ended up breakdancing towards the end of the night (in a kilt).

I had a whopper of a tequila headache after drinking a few too many Long Islands last summer. For two days I couldn't stomach anything but little sips of Coke. We pay for our fun, don't we?
