Let's begin. This is all you need, along with some water. Begin by draining your pineapple, reserving your juice. Add enough water to the juice to measure 2 1/2 cups.; pour into saucepan. Bring to a boil. Pour this mixture over your raspberry gelatin mixtures
in a large bowl. Stir for 2 minutes until completely dissolved. Stir in
your pineapple, cranberry sauce, walnut pieces, and your chopped apple.
Spoon into
24 paper-lined muffin cups
Refrigerate at least 3 hours or until firm. I did overnight. Remove liners Gently.. Quick, easy, and so tasty! They are lovely on the buffet table. Each little circle
loaded with bites of pineapple, apple, cranberry, walnuts and raspberry.. oh yes..
light my fire..
Will be tradition
from here on in. Can I just tell you too,
that these are nice to snack on also!!
Don't they make ya smile?

Cranberry Pineapple Minis
Cranberry Pineapple Minis
These were referred to me from my mother in law. She said they were fantastic and everyone loved them. She was right. Not only are they super tasty, they are simple to prepare, pretty to look at, and a nice change up from the traditional cranberry sauce at your turkey table. Original recipe here.

oh yes indeed..they do make me smile. My momma make something very similar to these on Thanksgiving, and I cant stop eating it!!!!
ReplyDeleteI love it, a very retro recipe! Then again who wouldn't love all those ingredients!!
ReplyDeleteWhat a cute way to serve up the traditional cranberries! I love the little mini size and they would really help add color to the Thanksgiving table.
ReplyDeleteI'm still craving those chocolate cream cheese peanut butter bars and now they're right there glaring at me everytime I leave a comment on your blog ;D Those evil little things.
These are great :) I had something very similar last year around Thanksgiving...yum!
ReplyDeleteWhat an excellent idea! Love these. Kudos to your MIL...and to you for the beautiful execution here. Hope you have a very happy Thanksgiving. : )
ReplyDeleteThose are so cute! I'll bet the kids would love them too - minus the walnuts, of course, but they are just the perfect size.
ReplyDeleteWOW...these look so good, they are so simple and easy. That is right up my ally...
ReplyDeleteYep. These make me smile. Why so tame tonight, Donna. Are you running a temperature? ;)
ReplyDeleteThey are colorful and cute and would light up any able.
ReplyDeleteMy mom would ABSOLUTELY love this...and it would be OK for her to eat, too! She'll thank you for broadening her dessert choices!!!
ReplyDeleteI do love a jellied salad, I must say. I love that these are in muffin cups for easy serving.
ReplyDeleteI'm not one for cranberries and pineapple but I love the idea of having these in cupcake form for the holidays. What a great "twist" this would add to a Chirstmas dinner :)
ReplyDeleteFruity goodness is all I can say. ;-D I need to get me some pineapple.
ReplyDeleteGosh, these are jolly good! Christmas already??? hehe.... Aaahh, getting ready for thanksgiving! These are just perfect for dessert.

ReplyDeleteI will make them today! I think they are true winners in my family!!
complimenti!! una meraviglia!
ReplyDeleteThese were so good, I was lucky ebough to be there and I was a little leery about them, but they honestly rocked!!!!
ReplyDeleteThese are so cute and make for such a great presentation! Genius. I would probably just sit around snacking on them incessantly though. As it is, I made homemade cranberry sauce and keep eating it out of the container by the spoonful every time I pass by the fridge. Sigh. something about that sweet tartness is so addicting.
ReplyDeleteTerrific idea! They look great... I was looking for something different for Thanksgiving this year... and I think this will be it!... another recipe bookmarked!
ReplyDeleteThey remind me of my grandma's jello salad.
ReplyDeleteLooks delicious!
well, now aren’t these fun little bites! i love the stunning color and easy-to-eat quality. very clever. very clever indeed.
ReplyDeleteThis looks like a fun treat! I love how simple and easy to make this is.
ReplyDeletePretty darn good idea!
ReplyDeleteYum! These sounds so delightful! I love the gorgeous color!
ReplyDeleteWow, those are soo good, love it, although I love individual things like that. I am weird!
ReplyDeleteSo cute, clever and tasty. My kids would really love these.
ReplyDeleteThey looks so festive! I love the tartness of cranberry.
ReplyDelete~ingrid
These remind me of being a kid! Definitely a wonderful treat and it won't weight you down.
ReplyDeleteThey should make those at my T-day dinner. It's one way to get the kids to eat their fruit. Very clever way to portion your cranberry sauce out too.
ReplyDeleteKudos to the mother in law! These look terrific! Great idea. If I remember correctly you had posted a cake of hers that I also made!
ReplyDeleteOh my gosh, this looks good. I love the combination of nuts and cranberries. My mom used to make a similar holiday salad. Thanks for the recipe.
ReplyDeleteWell, I must say...I'm not ordinarily fond of cranberries, but this recipe may change my mind! I love all of the flavors going on!!
ReplyDeleteThank you so much for the award, by the way...I had no idea you passed it along to Sarah and I! As I mentioned before, regrettably, I am VERY behind on checking blogs/posting, so I do tend to overlook things from time to time. I'll have to make sure Sarah saw it--she'll be equally as touched :) Take care and thank you again! We both absolutely love your blog!
These are wonderfully festive, very colorful looks great on a family table
ReplyDeletewell done
This is a brilliant idea! I bet the Jello sweetens the cranberries enough so that even my hubby would eat it! :)
ReplyDeleteJello always makes me smile, what a great looking treat. I really need to get my butt in gear and figure out my T-day menu :)
ReplyDeleteI love how colorful they are!
ReplyDeletethese honestly made me even more excited for thanksgiving because i'm going to make them! so cute and so yummy!
ReplyDeleteThese are really cute. Wonderfully festive as food for the holidays should be.
ReplyDeleteThey do indeed make me smile. Can't wait to try them. Thanks
ReplyDeleteThese are so pretty! And so refreshing. I bet they would make awesome popsicles!
ReplyDeleteAnd here I was thinking you had fashioned a mini skirt out of pineapple and cranberry.... ;)
ReplyDeleteYou always find and make the cutest foods. These are adorable.
ReplyDeleteOoh these are gorgeous little gems! My mother-in-law makes cranberry freeze and puts them inmuffin liners for individual servings- they are my absolute favorite!
ReplyDeleteOh WOW, and you take awesome pictures. :)
ReplyDeleteThey are so pretty!!! What a fun variation on cranberry sauce. I can't give up my fave, but I may have to make these to compliment it...nice :D
ReplyDeleteDonna, I love the looks of this. It looks positively fab!! You make some of the best food!!
ReplyDeleteHow perfect for the holiday table--love the combo of cranberry and pineapple too.
ReplyDeleteThose do look pretty, fun and tasty. I like that rather than trying to get a scoop of gloppy jello from the big serving, sometimes it's a pain. One of these lil' minis would be perfect size on the big, full Thanksgiving plate! ;)
ReplyDeleteDonna- I'm making the tarts for Thanksgiving- I saw that recipe awhile back. Everything, as usual looks wonderful
ReplyDeleteI love this idea! My friend Lea Ann recommended this post and I'm your newest fan!
