Yes, I sometimes thrive in the bitchiness that can be me. I love pre-period time, the time when hormones allow you to act out of control nasty, and you have the most plausible excuse, and believe me, no man will argue with it
Don't know about all you women in the blogosphere but I get cranky pre-period, cranky followed by extremely randy. Didja all know that the big Os help relieve cramps??
Didja know the Os are most powerful and plentiful..meaning multiple.. right before and right after the curse??
I call it the before the period horniness followed by the after the period necessary sex. If you want to get into TMI, it takes a REAL man to do the deed during. Mind blowing my ladyfriends, mind blowing. Like Yelling "Hurt Me Lone Ranger" mind blowing!!
Here is an easy to prepare weeknight dinner from Cooking Light, original recipe here, I adapted it slightly. Wonderfully tasty, FFH and child approved. Begin by gathering these
your chopped onion, minced garlic, sliced mushrooms and thyme. Now heat your oil in a large nonstick skillet over medium heat and add your onions, garlic, thyme, and mushrooms and saute 5 minutes or until onion is tender.
Add chicken and saute a couple of minutes till lightly browned.
Add wine, salt and pepper, and cook until liquid is almost evaporated..
Stir in your rice and broth.
Bring to a boil, cover and reduce heat, and simmer 5 minutes or until liquid is absorbed. Add in your freshly grated cheese
and chopped fresh parsley. Stir to combine.
Serve.
Satisfying, tasty meal.
Perfect for a busy weeknight.
Let's move onto Fast Oven Barbecued Chicken adapted from Cooks Illustrated Best 30Minute Meals cookbook. I can not tell you how tasty the barbecue sauce is. Perfect recipe to use if you're craving barbecued chicken and its too cold outside to brave the element. Begin by patting your chicken breasts dry and seasoning them with salt and pepper. Heat some veggie oil in a 12 inch nonstick ovenproof skillet till smoking and cook breasts till lightly browned on each side. Transfer to plate.
Gather together these sauce ingredients
Grate that onion, and make sure to have on hand this
Making SURE it's
I can't find Grade B easily here , at all, in NJ, so I order this brand off eBay constantly. You need Grade B in your home for delicious maple dishes. Trust me on that. Trust me on the powers of a BJ too. Whisk all the ingredients together and cook in the drained skillet, scraping up any browned bits, till spatula leaves a clear trail in the sauce, about 4 minutes.
Off heat return chicken to skillet and coat with sauce
Bake till interior reaches 130 on instant read thermometer.
Turn oven to broil and cook till thermometer registers 160, about 5 more minutes. Transfer chicken to platter, sauce t small bowl, season with salt and pepper to taste, and serve.
The perfect weeknight meal #2.
I must say if you are reading me in a reader you must visit my blog for printouts of the recipes. OK, that's all folks, I must go and yell at my FFH(firefighter husband) for breathing the wrong way now. He will just laugh at me. Doesn't he realize I want the boxing gloves on at this point in the month?
Fast Oven-Barbecued Chicken
Use REAL maple syrup and the lighter molasses for this ...

These look great. I especially like the one with rice, looks yummy and creamy. sigh...so many recipes to try, so little time....
ReplyDeleteBoth breasts looked tasty...You figure it out!
ReplyDeleteThat rice dish looks tasty!! And yep, an O definitely does help the cramping ;) Enjoy the bitchiness while you can ;)!!
ReplyDeleteBoth chicken recipes look so tasty, but the oven bbq'd one is a must try. The spiky bra is hysterical, Donna.
ReplyDeleteI hear ya on the PMS. It takes over me like a ton of bricks!!
ReplyDeleteLove the chicken darling
You always have the best chicken recipes! Both of these look delicious.
ReplyDeleteBoth chicken dishes look great! I like parmesan mushroom chicken slightly more...
ReplyDeleteThe spiky bras is .... LOL...I need to show my husband this picture!
The only thing wrong with these two recipes is trying to decide which one to cook first! My family would swoon over the chicken and rice, but the maple syrup has me thinking...
ReplyDeleteMmmm...the first one kind of reminds me of risotto. Looks yummy.
ReplyDeleteAnd I love anything smothered in barbeque sauce! Yes, anything.
Also...WOW! How in synch are we? It's my bitch...I mean pre-period week, too!
I can't wait to try the Parmesan chicken! I need to go see if I have chicken in my freezer or if an emergency grocery store run is necessary. :)
ReplyDeleteBoth of those look super yummy! I like how you go from sexy talk to cooking, boom! no inbetween, LOL. I had a hysterectomy so none of that yucky stuff for me anymore, loves it!
ReplyDeleteWoooo, that bra is scary scary. Not the chicken though. The bbq chicken is definitely not scary at all! Very good actually.
ReplyDeleteI almost made the chicken and rice dish - I think I will for sure now. I also am loving the barbeque chicken too, adding maple is a great idea.
ReplyDeleteThe chicken is much less scary than the bra. Both chicken recipes look fabulous.
ReplyDeleteBoth look like great chicken, without the cheese, but the barbecue makes me swoon so that is the winner for my family.
ReplyDeleteThe first recipes is not slouch either but that barbecue chicken is glorious.
What is your secret? How do you jump from one subject to another and it sounds normal? Where do you get the time for cooking? Sounds to me, when you are not grumpy, you have better activities to spend your time on.
lol, i learn something new everyday! they both look awesome, and you know how i like my cooking light recipes! ;-)
ReplyDeleteChicken and rice is my husbands favorite dish! So much for culinary school!
ReplyDeleteTwo great weeknight recipes!
ReplyDeleteP.S. I just got back from spending a few days in NYC. I came across a sign while strolling NYC that I thought you would enjoy. My husband was the first to notice it but, I was the first to think about you. As soon as I can get my photso downloaded, I will send it to you.
I love both recipes!

ReplyDeleteWinner, winner, chicken dinner! Times 2!
I have the same symptomps as you. Get out of my way when I'm into PMS. The beauty of beeing a woman. Love your dishes! Yum! :)
ReplyDeleteYou are too funny!
ReplyDeleteOh the joys of PMS!
Both recipes look great. Never have enough chicken recipes is what I believe. You had me laughing when you wrote that your husband was breathing the wrong way....at that time of the month they do nothing right!
ReplyDeleteMmmm...that chicken and rice dish is calling my name.
ReplyDeleteI think some men would find that spiky bra to be a turn on!
It takes a real man to do the deed during indeed. Men can be such wimps!
This post just cracked me up! Cranky is right :)

ReplyDeleteThe BBQ chicken is making my mouth water - delish!
ReplyDeleteLove the oven idea with the BBQ chicken, especially during these rainy months!
ReplyDeleteI totally get that, believe me. And guess what? Even after the monthly crap stops, you STILL get the hormonal crap, sometimes even worse. Sucks.
ReplyDeleteOn the other hand this looks delicious. I'd love some of that bbq right now!
That chicken is so perfect for a busy day!
ReplyDelete1. This is why the gods invented shower massagers.
ReplyDelete2. Love the easy-peasy chicken dinners! Always a family-pleaser.
I am especially liking that parm chicken and rice...mmmm.
Love the comforting sound of the Parmesan Chicken Rice. And the BBQ chicken must be yummy with the special maple syrup sauce!
ReplyDeleteThe oven BBQ chicken sounds outrageously delicious. I think we'll be having that one some day soon. YUM YUM
ReplyDeleteI especially like your bbq chicken. It looks so good smothered with all that sauce!
ReplyDeleteI am totally guilty of using the PMS excuse every month. I love Cooking Light recipes too :)
ReplyDeleteI must get that bbq chicken recipe - even though we can grill year round here, it's still nice to have an alternative.
ReplyDeleteBesides, I'm not going to argue with you right now, I might get the boxing glove across the face!
Sometimes I think even if I had that bra on my husband still wouldn't get it and he'd still just get in trouble for breathing! ;)
ReplyDeleteIs it just me, or at first glance do the spikes on the bra look like piped on chocolate. Yeah, it's probably me--always thinking about chocolate. hehe
Easy and delicious! I just recently found where I can buy grade B maple syrup. I only bought a pint but they actually had a whole gallon for sale...whoosh! I think this rice dish is calling my name next week for dinner...yum!
ReplyDeleteBoth of these dishes look incredible, especially the chicken and rice...it looks so creamy and delicious!
ReplyDeleteOhhh, I'm lovin the parm rice! Looks VERY good and I love mushrooms.

ReplyDeleteWhat, ME PMS???? The very presence of my family at the moment is doing me in!! BUT the chicken recipes look wonderful and I am quite hungry!! Have a great weekend and at least you got me to chuckle :-)
ReplyDeleteAdding both to my list to try, thanks!
ReplyDeleteAny dish with mushrooms is great, in my opinion. Some tasty meals you presented Donna!
ReplyDeleteLove the spike bra, too. And I love your easy family dinners! Always super tasty. Love the bbq sauce especially! Gorgeous!
ReplyDeleteI am loving the spiky bra. The hubby would get a kick out of that one. I am always up for a new chicken dish and I would love to give the bbq dish a go. Yum!
ReplyDeleteThat rice and chicken looks so yummy!!!
ReplyDeleteGreat recipes!!
ReplyDeleteThankfully I don't have to worry about my monthly visitor anymore! Both these recipes look fantastic Donna.
ReplyDeleteOMG cramps are the worst! I found that being on the pill helped that SIGNIFICANTLY. But still...ick. Loved this post, Donna! The quickie recipes look great, too! <3
ReplyDeleteThat bra looks dangerous! Your dishes are making me hungry!!
ReplyDeleteI can not tell you how much it amuses me that the comments are almost always all about the food! Which is totally yummy, but really?
ReplyDeleteHow do you ignore all that other fun that's happening around here.
So, I'm going to be the first to admit that I knew that about P and O's. Right with you, girlfriend!
Love, love, love your blog.
I'm a second hand sufferer of PMS (like second hand cigarette smoke)!
ReplyDeleteI definitely agree with you on the B grade maple. It's better. I think Alton did an explanation as to why, I just know I like it better.
Donna, you're so hilarious but I like who you are! No hide & seek! I love the way you make the rice, so inviting. Oh, I bet my son would love it too.
ReplyDeletehaha, I've made that same cooking light chicken...and ya, it needed a little adapting.
ReplyDeleteAt least when you're cranky, you know why. I had most "stuff" removed years ago...so I still get the crankies but I don't have the "confirmation".
I make BBQ chicken indoors all the time, except I usually use my favorite jarred sauce. Both meals look easy and delicious.
ReplyDeleteHope you're feeling better by now. Cramps are no fun. For me, I get back aches :-(
