Two Fast Weeknight Chicken Dinners!! Parmesan Chicken and Rice followed by Fast-Oven Barbecued Chicken

I am playing up the period game with FFH. Pretending to feel quite virginal at the moment. No horny talk to him today. My legs are tightly crossed, my lips (upper pair) are clenched tightly together, my Don't come near me bra is hooked like cement. Yes, I sometimes thrive in the bitchiness that can be me. I love pre-period time, the time when hormones allow you to act out of control nasty, and you have the most plausible excuse, and believe me, no man will argue with itDon't know about all you women in the blogosphere but I get cranky pre-period, cranky followed by extremely randy. Didja all know that the big Os help relieve cramps?? Didja know the Os are most powerful and plentiful..meaning multiple.. right before and right after the curse?? I call it the before the period horniness followed by the after the period necessary sex. If you want to get into TMI, it takes a REAL man to do the deed during. Mind blowing my ladyfriends, mind blowing. Like Yelling "Hurt Me Lone Ranger" mind blowing!!
Here is an easy to prepare weeknight dinner from Cooking Light, original recipe here, I adapted it slightly. Wonderfully tasty, FFH and child approved. Begin by gathering theseyour chopped onion, minced garlic, sliced mushrooms and thyme. Now heat your oil in a large nonstick skillet over medium heat and add your onions, garlic, thyme, and mushrooms and saute 5 minutes or until onion is tender. Add chicken and saute a couple of minutes till lightly browned. Add wine, salt and pepper, and cook until liquid is almost evaporated.. Stir in your rice and broth. Bring to a boil, cover and reduce heat, and simmer 5 minutes or until liquid is absorbed. Add in your freshly grated cheese and chopped fresh parsley. Stir to combine. Serve. Satisfying, tasty meal. Perfect for a busy weeknight. Let's move onto Fast Oven Barbecued Chicken adapted from Cooks Illustrated Best 30Minute Meals cookbook. I can not tell you how tasty the barbecue sauce is. Perfect recipe to use if you're craving barbecued chicken and its too cold outside to brave the element. Begin by patting your chicken breasts dry and seasoning them with salt and pepper. Heat some veggie oil in a 12 inch nonstick ovenproof skillet till smoking and cook breasts till lightly browned on each side. Transfer to plate.Gather together these sauce ingredients Grate that onion, and make sure to have on hand this Making SURE it's I can't find Grade B easily here , at all, in NJ, so I order this brand off eBay constantly. You need Grade B in your home for delicious maple dishes. Trust me on that. Trust me on the powers of a BJ too. Whisk all the ingredients together and cook in the drained skillet, scraping up any browned bits, till spatula leaves a clear trail in the sauce, about 4 minutes.
Off heat return chicken to skillet and coat with sauce Bake till interior reaches 130 on instant read thermometer. Turn oven to broil and cook till thermometer registers 160, about 5 more minutes. Transfer chicken to platter, sauce t small bowl, season with salt and pepper to taste, and serve. The perfect weeknight meal #2.I must say if you are reading me in a reader you must visit my blog for printouts of the recipes.

OK, that's all folks, I must go and yell at my FFH(firefighter husband) for breathing the wrong way now. He will just laugh at me. Doesn't he realize I want the boxing gloves on at this point in the month?

  15. Both look like great chicken, without the cheese, but the barbecue makes me swoon so that is the winner for my family.

    The first recipes is not slouch either but that barbecue chicken is glorious.

    What is your secret? How do you jump from one subject to another and it sounds normal? Where do you get the time for cooking? Sounds to me, when you are not grumpy, you have better activities to spend your time on.

    Is it just me, or at first glance do the spikes on the bra look like piped on chocolate. Yeah, it's probably me--always thinking about chocolate. hehe

  41. Easy and delicious! I just recently found where I can buy grade B maple syrup. I only bought a pint but they actually had a whole gallon for sale...whoosh! I think this rice dish is calling my name next week for dinner...yum!

  56. haha, I've made that same cooking light chicken...and ya, it needed a little adapting.

    At least when you're cranky, you know why. I had most "stuff" removed years ago...so I still get the crankies but I don't have the "confirmation".

  57. I make BBQ chicken indoors all the time, except I usually use my favorite jarred sauce. Both meals look easy and delicious.

    Hope you're feeling better by now. Cramps are no fun. For me, I get back aches :-(
