Grilled Chicken Fajitas With Peppers and Onions

Have you ever got caught looking? You know what I mean.. Have you ever been caught with your eyes where they aren't supposed to be?? Well, it happened to me. OMG, talk about a red face, and it takes a lot to give me a red face, Let me Tell You. My daughter had softball practice the other day, and her coach was entering the dugout where I was hanging out..

The guy had on gray sweatpants, and his ample lumpage caught my horny eye. Holy crap, one of the biggest, longest lumps, like ever, and NO it wasn't a cup, I just know,don't tell me, I am a Johnson expert, you know.

Well, my eyes must have popped like saucers, and I was just about to nudge my girlfriend to give her a cheap thrill, when the coach said, Hi, Donna. I looked up and he had the gleam in his eye, that knowing smile, the Yeah, I got the goods baby don't you want it ,look.. My face flamed I tell you.
He caught me.. And he was happy bout it. I mumbled my hello and winked. No I didn't wink, I said hello and inadvertently stroked my right breast. Kidding again, I just kinda said Hi back.. and watched his rear as he walked away..

How come there are names for men and not women.. thought to ponder. Why are there sayings like He's a leg Man.. He's a Boob man, He's an ass man.. There should be equal time for women too. I mean we admire men from afar and up close, do we not?

There should be adages like She's a bicep woman,

She's an ab woman,
She's a leg woman, She's a butt man,....oh yes ride me cowboy
She's a pecs woman and of course, She's an all about the johnson woman. ..um like show me yours, studly.
Double standards Don't you hate them?? . Yep, women make sure to look atthe lumpage, just try not to get caught.. unless you want to, Its kinda fun actually.. I may do it again.. to the first base coach, I been eyeing him, ladies, I been eyeing him..
Yeah, I been eyeing him too!

This recipe is from Cooking Light Magazine.. Aren't you proud of me , Teresa?? If you do not know Teresa, stop by her blog, she has awesome food choices.. she turned me on, no not literally, she turned me on to Cooking Light recipes. Now Teresa, Iwant to know your favorite one.. Here is what I made.

Grilled Chicken Fajitas with Peppers and Onions. I only adapted it slightly. Original recipe found here.

Combine all your marinade ingredients together,seen here,

including your freshly squeezed lime juice,
and freshly grated lime rind, in a large bowl.

Take your chicken breasts and place them in a large resealable bag along with 1 1/2 cups of the marinade. Seal and marinate 4 hours or overnight, in the refrigerator turning occasionally.

Cut up your red peppers, green peppers, and vidalia onion into wedges as directed.

Combine these veggies with the remaining marinade in another large zipper top bag and marinate the same way as the chicken.

Prepare your grill. I do this by handing FFH a beer, or 2, or 3..

Remove chicken from bag and discard marinade. Remove veggies from bag and save marinade in a small saucepan.; set aside. Place chicken
and veggies on grill rack coated with cooking spray ( I placed veggies in a disposable tin for FFH)
grill 8 minutes on each side or until desired degree of doneness. Wrap your tortillas tightly in foil.
Place tortilla pack on grill during the last 2 minutes of grilling time.Bring reserved marinade to boil. Cut chicken diagonally into thin slices.
Place the chicken and veggies on a serving platter
and drizzle with the reserved marinade.
Get your stuff lined up, your sour cream, salsa, cilantro if using.. FFH hates cilantro, :( so I omitted.
Arrange chicken and vegetables in the tortilla.
Optionally top with sour cream, chopped cilantro, salsa. Fold sides of tortilla over filling.
Serve.
This meal was wonderful
and declared a keeper by my FFH.
I will be making it again. Simple and so delicious!

Grilled Sausage Ring With Parsley and Provolone over Pepperonata

I have been MIA for a few days and some of you noticed, why thank you! Coleen of Coleens Recipes said it the funniest.. You haven't posted in three days. I'm beginning to worry that you have 69nd yourself to death. Please say it isn't so... Don't you just love her?? I do and I love her blog also!!

My answer is nothing as fun as that Im afraid.. Life happened and it got in the way of blogging.. We just had our home put on the market..

lots of work goes into getting a home ready for the market.. and its hard to do when you have 4 children of your own full time,
and then 8 children
(yes, I know 2 are not in the picture, I didn't lose them , they are over here with me)
every other weekend. Not to mention a puppy.
Remember my puppy, Clooney, so , yeah, not named after my boytoy George.

So Ive been working on Overload, between the house, my work, the kids, their sports, etc.. I miss my blogging,
I miss my exercise,
haven't even had the chance to cook much..never mind breathe, give BJs, have sloppy sex, get drunk, etc.. My posts may be every few days rather than every other which was my norm.. But please dont forget bout me.. once I'm on track and in my groove again, things will be more normal. If my life can be called normal. I even missed out on EONA of Karen's and I so had my idea down pat.. but she's doing it annually and I will save my secret thoughts for then.

I have missed my guy Ty

at TFF, for the past 2 weeks, he's liable to stray. You know what, let him, no one is better at taking care of him than me, and he will learn that lesson. Hopefully the ladies at TFF won't kick me out..

So, as I am readying our home, I think of this kitchenmy kitchen my FFH built FOR me. I will miss my cabinets, my double wall oven, and the love that went into building it.. and the height of this eat on counter.

He made it especially for that perfect ..UMM.. spread of a meal. Perfect height for doing the feasting deed, let me tell you. I highly recommend it.. Man will I miss that counter..

The pool, MMMHMMMM,

..never will the children know what went on in this pool, they would never recover. Might I just say diving boards are NOT just made for diving!!
Neither are lounge chairs.. to use a lounge chair properly, ladies, in order to please your guy, work on your squats.. oh yes, work on those squats and take it away in the lounge chair. Bring him a beer, pull down his suit, and do your squat reps in groups of 20, and he's yours forever.

Yes, so as we show our home, and get ready to move more south in this state, I look through the rooms and remember, yes, the stairs,

check did those, yes in front of the dining room window while nosy neighbor watches,
check, no area must be left unchristened, so just to make sure, I will have my FFH working busy the next few nights.

Anyway, it is my pity party and Ill cry if I want to, cry if I want to...bet I can make a dirty song outta that, Its my hubbys cOck, Ill suck if I want to , suck if I want to , suck if I want to, you would suck to if you wanted something new..

Anyway onto my recipe.. This is from Carmine's Family Style Coookbook.. Carmine's is a restaurant in Times Square NYC that I love.. it is family style and has terrific food.

I recently checked their book out of the library and this is what I made: Grilled Sausage Ring with Parsley and Provolone over Pepperonata

BTW, I love the book and will be buying it, it is loaded with fanfreakingtastic recipes.

To begin, gather your peppers for your pepperonata.

Slice them up. Heat some olive oil in a pan, add the peppers
and cook till they are brown and wilt a bit.

Add your chopped garlic and cook for 2 more minutes. Transfer the peppers to a large bowl with a slotted spoon. Set aside.

Add 2 more tablespoons oil into the pan. Get your Spanish onions, and slice 'em up.
Then saute till browned.
Return your peppers.
Add your cherry tomatoes, fresh oregano,
dried oregano, and bay leaf.

Season the sauce with salt and pepper to taste. Reduce to medium and cook the sauce for 10 to 13 minutes, partially covered,

or until peppers softened the way you like em.
Now, grill or broil your sausage. (Detailed instructions are on my key ingredient card below).. When done, spred the pepperonata on a platter. Lay your sausage ring
on top
make it look pretty like you
and serve.
With crusty bread of course.. OK, gotta go prep for FFH tonight, we have to recheck the attic pull down ladder..
