Giveaway, Blueberry Sour Cream Coffeecake, and Bits of My New Home.

Lotsa lotsa work to do. One of my FFHs favorite parts of our new home,
besides the sound proof bedroom walls, is the fire pit.

I have been cooking very quick and easy dishes this week, not even taking too many photos, just too hectic still. And to top it off, my laptop crashed along with all my stored food photos, so I have nothing left saved as I type in on my new laptop. Bear with my burdened soul, will ya.

OK, Let's get down to business with this quickie cheater weekday breakfast. Blueberry Sour Cream Coffeecake. Gather these ingredientsPreheat your oven to 375. Grease an 8 or 9 inch round pan. One guess which size I chose. DUH!Grab the blueberries out of the mix, rinse and drain them, and combine with some blueberry preserves. Set aside in a small bowl.Now combine your muffin mix, sour cream, milk and egg in a medium bowl. Stir until ingredients are moistened. Spread half of batter in pan. Spread half of blueberry mixture on top of that.

Spread remaining batter over blueberry layer and finish with remaining fruit layer on top, avoiding edges. Sprinkle with the enclosed streusel. Bake for 25-35 minutes(depending on size of pan) or until golden.
For your glaze, combine confectioners sugar and water. Stir until smooth. Drizzle over your hot coffeecake.
Simple
and certainly delicious.

Chicken Parmesan and Chocolate Pudding Poke Cake

Still unpacking, still not myself yet, still disorganized, still have 3 boxes of sex toys left to hide around the house.. you know for impromptu sessions. I have aches in my body unpacking my prior home of 16 years into our new home of 1 week. So, I am SO not me yet, but I am getting there, bear with me, bitch on wheels is my name of the week. The me you know and love or know and hate will be back soon.

Here is my quick weeknight humble food offering ..chicken parmesan and a chocolate pudding poke cake. Please excuse my photos as I am still playing with the light in my new home.. also I dont have the energy to focus much on quality right now. I know you understand. Hoping to have some pics of our new digs next time around. Waiting on a sunny day NJ for that!

OK anyway, my weekly quickie dinner .. Starting with the Chicken Parmesan. Either make your favorite marinara, or use up your leftover Sunday Gravy like I did. Heat it up gently in a pot. Set aside.

Prepare your chicken. Get some nice cutlets, Set up your dipping station.

Flour them, egg them, and then breadcrumb them.
Fry them in some olive oil and butter
till done to your liking.
Set aside. Grab your big baking dish and place a layer of sauce on bottom. Next , layer your breaded fried chicken.
Now, shred some freshly grated parmesan cheese on top.
Cover with more sauce.
Top with slices of mozzarella cheese, thin or thick as you like..
we like the cheese.. finish it off with more sauce. Bake at 350 till cheese melts.
I ususally serve with a side of pasta, salad, and some crusty bread.
Delicious, satisfying easy to make weeknight meal. My children and FFH request this all the time.

I saw my weeknight dessert recipe on The Friday Friends blog. Love Debbies blog. She has delicious food and always some nice chatting to do, go visit her. I knew I had to make it when I saw it. It is so simple yet so delicious. Perfect for when you want to make a dessert but dont want any hassle. Here's how you do it. Grab these 2 items.

Prepare cake mix according to package directions.
When cooled, prepare instant pudding according to package direcions. Make some holes in your baked cake by pressing/ poking something like this (If I were myself Id make a comment about poking, poke me baby)
into the cakePour the pudding over.
Make sure it gets in all the holes. (If I was feeling up to myself, Id have something to say about that line also)Spread as evenly as possible.
Refrigerate for a few hours. And serve. Look how delicious this is.
It is pretty and tasty.
