Roast Kielbasa Supper This is one of those one pot dinners that make cooking a breeze. Fabulous flavor, quick prep, 5 basic ingredients,easy to throw together, one dish to wash, and looks kinda pretty..but then again all types sausage johnsons look kinda pretty to me..wink wink.
I also love this recipe because of the adaptability factor. But we can get into that later. It is a Rachael Ray, and love her or hate her, her food works for my family lifestyle. Original here. My adapted version below.
As I said 5 ingredients people, and here they are.. kielbasa, baby red potatoes, Gala apples, onions and some honey.. of course you'll need olive oil, salt and pepper, but they do not count when counting ingredients. I say so.
Substitutions.. Don't like kielbasa? Use Italian sausage, turkey sausage, chicken sausage. Try honey crisp apples instead of gala.. how bout sweet potatoes instead of baby red? You get what I mean.
To begin, grab a large shallow roasting pan, and drizzle your potatoes and onions with olive oil, salt and pepper.
Roast them at 425 for about 40 minutes. ( I would have thrown the kielbasa in at this point..but more on that later, too) Meanwhile, cut your apples into thin wedges, and toss them in a bowl with honey, olive oil, salt and pepper. Generous with the honey,K?
Add the kielbasa and apples to the potatoes and onions in the last 20 minutes of cooking time. I disagree with Rachael on this but I'll explain after.

Fantastically flavored, delicious dish! Would I make it again? Yes. Would I make changes? A few.
I would cut the kielbasa into 1 inch chunks to make it more crispy.. I would also add the kielbasa in about 10 minutes after cooking begins. Rather than 20.
I'd cut down the apples to 3, and cut into thinner wedges. My changes are noted on the key ingredient recipe card below. Or you can try Rachael's way on the above link .
Tasty, quick, fall weeknight dinner! Adapt it to your tastes.
But do give it a whirl. Garnish with extra honey, and dip some good bread in those irresistible pan juices.

Apples and potatoes in the same pot seems bit odd though. I think I'd likely serve my mashers on the side instead. Of course that would negate the convenience of a one-pot meal though. Duh!
Everyone can say what they want about rachel ray but most of the time her food is actually seriously tasty! This is definitely fall in a baking pan. Delicious.
Sounds super-yummy! I've never eaten apples in a main dish like that before, but the new house we bought has an awesome apple tree and I need all the apple recipes I can get :)
