Chocolate Pie

Chocolate Pie Oh so freaking good!

I made this pie as one of our many Thanksgiving Day desserts, and holy cow, was this ever a winner! Damn delicious. First seen on Joy of baking, original here. I can honestly say this will be repeated in my home, and no way will I wait for it to be a holiday!

Without further ado, let's start! Begin with your graham cracker crust. Combine your graham cracker crumbs, sugar, and melted butter. Press firmly on bottom and up the sides of a well greased 9 inch pie or tart pan. Cover with plastic wrap and chill in fridge while you make the filling. To make the filling you will combine your cocoa powder, cornstarch, sugar and salt. You will then whisk in your milk till it forms a paste. Whisk in your egg yolks one at a time until smooth and combined. Set aside while you heat the milk and cream. Bring your milk and cream just to a boil, watch carefully.. when it foams up, it is ready. Gradually pour this into the egg mixture whisking till smooth. Reheat for 5-6 minutes till mayonnaise consistency. Pour through a strainer into a bowl and add your finely chopped semisweet chocolate, butter, and vanilla, mix till combined. Let cool to room temp, then pour into your crust. Cover and refrigerate overnight. Make your fresh whipped cream by whipping heavy cream until soft peaks form, then your sugar till firm peaks form. Spread over pie. Shave some chocolate on top and you are ready. Absolutely wonderful. I kid you not. FFH heartily approved, guests enjoyed, pie was gone, except for the slice I hid to picture for you. TRY IT!
