Ever have those dishes that u just LOVE, but can not get a good photo of?? Remember my other fugly post here? Well here are 3 dishes I have repeated in my home many times, but can never ever get a good shot of. This Classic Minestrone soup comes from Cooks Illustrated and it is simple to make and a keeper for sure. Loaded with veggies,a rind of parmesan, tomatoes and beans, it comes together easily, and tastes fabulous! Photo is lacking in quality but I assure you the taste is there.It is now my go to Minestrone.

This stuffed pepper soup is fantastic! Yes, it is adapted from Rachael Ray, original here, but it is utterly delicious! I can't decide if I like the stuffed cabbage soup or this one better. HORRIBLE SHOT,but it is a wonderfully satisfying bowl of goodness.

This chocolate peanut butter chip cake comes from Evil Shenanigans. I sent it off to the firemen, and immediately had a request from one of them to make him his own.I lost my shots of the process and the full bundt cake, but here are shots of the slices I sent in. So in this case the picture isn't worth a thousand words, but so so worth a try. Bet you'd love it as much as I!Recipes below on Key Ingredient card, as all my recipes are.

Ever have those days where you have about 10 young mouths to feed, you know cus like you have 4 kids of your own and about 6 adopted ones from around the neighborhhod?Meet my daughter Marina(the shorter of the two) and her BFFL as they call each other, Madyson. Those are just 2 of the mouths that clamor for nutrition...I Just LOVE this shot..

Anyhow, You know the days where the children plead , beg, and threaten, can so and so eat over and so and so and it wouldn't be fair if the other so and so didn't eat over??? Yes, you have, well, welcome to my world, our world.

I was planning on making chicken francese, however all these little mouths did NOT want lemon, so what's a mom to do? Turn into Sandra Lee for a minute. I became a Semi Homemade Mom for a while. HEY>>At least I never fake my orgasms. Rosie, stop reading, or you'll hate me forever..

I some of this premade stuffing, cooked it up and let it cool. I then made a quick homemade gravy by making a roux with butter and flour, then adding some of these, and a dash of this, and let it thicken a bit. I pounded some chicken cutlets lightly. Placed some stuffing in the center, rolled it up, toothpick it to secure if you'd like,and repeated. Place in a baking pan. I then poured my semi-homemade gravy over the rolls. (I suppose you can use jarred, but I just can't do it), and baked till done. Would you know they loved it... even my FFH had some and said it was quite tasty. Wanted to do a cross section shot, but everyone was too hungry to wait.. HMMMM... OK whatever works.

As a side dish I whipped up some of Ina's Zucchini with Parmesan. Original Here, I halved the recipe. Just brown some onions in oil, tossed in my cut zucchini, added some kosher salt and some pepper. Cooked for a bit, then topped with freshly grated Parmesan cheese, and it was quite tasty. Sometimes simple is best! Back tomorrow with some gifts I wanna tell you about.
