KFC Coleslaw, and some Cheater Baked Beans

KFC Coleslaw Cheater Baked Beans
Went to an impromptu BBQ the other day. Not much time to prepare the side dishes I was asked to bring. So, I pulled out these 2 tried and true recipes that have always worked well for me in the past. They are all favorites of ours.Recipes below on key ingredient cards.

Let's begin with KFC Coleslaw, original found here. So simple to prepare, such minimal ingredients, and a fabulous summer fave! Now, I'll be honest, I buy the premade cole slaw mix, and it works perfectly. Just add some minced onion. If you would like however, feel free to shred some cabbage, and carrots, and use that. So all you have to do is combine these dressing ingredients, and swirl it in a food processor until smooth. Pour over the cole slaw and minced onions, and mix thoroughly. Cover and refrigerate a few hours or overnight. Comes out a winner every time.

I call my next Barbeque staple, Cheater Baked Beans. They do not take forever and a day to cook, and they require no soaking. But the flavor is there. Begin by cutting your bacon into half inch slices, cook, and drain it. Set aside. Now, Pour your beans ( I prefer Bush's Best Original)in a 9x13 or 3 quart casserole dish, along with the brown sugar, mustard, chopped onion, ketchup, and a dash of garlic powder. Mix it all up. Then add in the bacon and mix again. Bake uncovered for 1 hour at 350. Let them set out to cool for 1/2 hour to 1 hour before serving. Very good! Perfect 2 dishes for an impromptu barbeque!!

  3. I'm not a big fan of coleslaw *unless* it's KFC! I made this recipe once and it was really good. And I've had these beans that someone else has made and they are terrific! Have a great summer, Donna!
