Honey Roasted Red Potatoes
Always I am on the lookout for new, quick, easy roasted potato recipes. I came upon this tasty treasure on allrecipes. I did tweak it a bit, by doubling the sauce, and increasing bake time; Those tweaks are listed below on the key ingredient card. These potatoes are quite yummy, they are a breeze to make, and are loaded with flavor.
Cut up 1 pound of red potatoes in 1 inch chunks. Lay them on a rimmed baking dish. Top with some finely diced onion. In another bowl, mix your melted butter, honey, dry mustard, salt and freshly ground black pepper. Pour over potatoes and mix thoroughly trying to coat all potatoes. Bake in 375 degree oven for 40-45 minutes.
Mix a couple of times during baking. I loved the crispy exterior and the creamy interior.
As I mentioned, I did double the sauce, I also baked for longer than stated, and crisped for 2 minutes on broil at the end.
