Baked Crispy Ranch Cornflake Chicken Nuggets
Summertime still here in NJ. School doesn't start until September. 4 children plus their friends equals an expensive lunchtime at my home. Chicken breasts at 40% off in my local store. This equals cheap lunch for the kids plus their neighborhood buddies!! I'm telling you.. they DEVOURED these tasty morsels in less than 10 minutes.. they wanted more, and they wanted to know when I will make them again. Demanding little suckers also requested baked onion rings, seen here,
to accompany them next time. Oh and yes mom, with strawberries and peaches cake, seen here, for dessert..
Since when, children do you have dessert after lunch? Demanding things! Geez, the rigors of being a mom. Fabulously simple recipe, accessible inexpensive ingredients, and definitely a kid friendly favorite. I must tell you though, the FFH enjoyed sneaking one or two as well. Recipe originally from here, also found below on my printable key ingredient card. Begin by crushing your cornflakes,
then grab a block of Parmesan cheese.
Grate it. Combine the cornflakes, freshly grated Parmesan cheese, salt, pepper, and garlic powder in a bowl.
Mix. In another bowl pour some of your favorite ranch dressing.
If you have the inclination, use homemade. Now you have two bowls. Duh.
Dip in ranch first, then dip in the cornflake mixture, pressing to adhere. Messy job, yes. Place on a GREASED baking sheet
(I used Pam), and bake at 400 for 15 minutes or done till your liking. Take them out of the oven.
Let rest 1 minute and serve. They were juicy,
they were crunchy,
and they were given an emphatic thumbs up so good mom, rating from the bunch.
Try this one for your kids. Mine enjoyed with ketchup...ewwww..
but you can also use any dipping sauce, such as this honey mustard. Enjoy!
